Eating for Energy & Clarity

I started Covid lockdowns taking exceptional care of myself. Like for many of you, it was an opportunity to walk / exercise more, eat better, have more quality time with my family, and take up those hobbies I had been wanting to get around to trying. But over time, I found that the energy and enthusiasm I went in with was replaced by a feeling of “when will this ever end”. And my two walks per day went down to one, went down to zero.

I noticed that shift and came up with a plan, reaffirming my commitment to my own health and wellbeing. Since then, I’ve been focused on balancing my health for optimum performance and that has had me eating really clean.

Salads are my go-to for breakfast (sometimes) and lunch.  I tend to have a base of greens (kale, spinach, arugula, or mixed baby greens) doctored up with sliced green onions and an herb (cilantro or parsley).  

Then I top with anything I have in the fridge.  Like:  

  • Beets
  • Carrots
  • Cucumber
  • Pickled egg
  • Tomatoes
  • Olives
  • Hummus
  • Radishes
  • Fruits (Strawberries, grapes)
  • Seeds and nuts
  • Shaved sharp cheeses or
  • Crumbled goat cheese
  • Roasted veggie leftovers from dinner!
  • Black beans & rice (again leftovers)
  • Salsa / homemade pico
  • Avocados
  • Homemade veggie burger

You eat with your eyes first…. I like my salads to be beautiful *and* delicious!

I also top with other herbs when I have them like:  Thyme, Mint leaves, Rosemary, and Chives. And finally maybe a tablespoon or less of balsamic vinaigrette or another homemade vinaigrette. 

The difference in eating this way, for me, is increased energy, mental clarity, and a feeling of lightness after I eat (instead of that heavy feeling).  I’m a big believer in healthy body leading to healthy mind (and vice versa).
